Strawberry and Raspberry Pavlova

After our fab day picking delicious strawberries and raspberries at Peterley Manor Farm I knew I'd need to so something pretty special with our handpicked fruit!


On Sunday we had an impromptu BBQ with some good friends and it gave me the perfect excuse to make a pavlova for the first time in years.

It's been so long since I made one that I forgot how simple it is. Other than a lot of patience when it comes to whisking, it doesn't take an awful lot of time or effort to make a scrumptious summer dessert.

Ingredients
6 egg whites
small pinch of salt
350g caster sugar
2 teaspoons cornflour
1 teaspoon white wine vinegar
approx 400g of strawberries and raspberries
300ml double cream


Method

- Preheat oven to 140°C, grease your baking tray and line with baking parchment
- Whisk the egg whites in a large bowl with a very small pinch of salt until they form soft peaks (I used an electric hand whisk - there is an awful lot of whisking in this recipe)
- Adding one spoon at a time, whisk in the sugar until the mixture is glossy
- Whisk in the cornflour and vinegar
-Slowly pour and spread the mixture onto your prepared baking tray, using the back of your spoon to make an indent on top for holding the cream and fruit


- Add a small bowl of water to the bottom of the oven (my Mum's tip for a perfectly cooked meringue)
- Bake the meringue at 140°C for 1 hour 15 minutes, once cooked leave it to cool in the oven to prevent cracking (or just grab it in excitement as I did and deal with the cracks)
- Whip the double cream and spread over the meringue before sprinkling the strawberries and raspberries on top.


As an added extra for adults, you can muddle the fruit with some icing sugar, orange zest and a tablespoon of Conitreau for 30 minutes before sprinkling over the meringue and cream.


This was a perfect dessert to finish up our BBQ and there was still plenty left over for guests to go back for seconds (or thirds).
